Back to work
Drew: Yesterday Drew attended an all day meeting for the $50,000 SIFE grant that the school recieves each year. The grant is due no later than October 5th. Today I was out of school for the day recruiting students from the MS for next years class.
Cooking class part 1 was completed yesterday and part 2 begins on Thursday. The three day weekend is this weekend and we are looking formward to the time off.

Fourth of July Break from all things Columbia
I am in the thick of things at Columbia and Anne is still at work without the kids. We took a break to go over to our friends house in Somers for the Fourth.

What's Going On
Drew is in the last two days with kids at his school. Kids are on the last two days and weekend review for The Regents which begin with United States History on June 16, 2009. Drew begins classes at Columbia on June 22nd. He will be in class from 8-5 with a paper due every morning until August.
Anne is working through the end of misddle school in Dobbs Ferry. She loves the school and is enjoying her first year at the school.
Andrew is having a ball and getting bigger every day.

Clinkerdagger Restaurant -- dijon Chicken
Roasted Chicken Dijon
Clinkerdagger Restaurant (Spokane, WA)
4 chicken breasts, scallopini style - cut in flat halves and pounded thin (or in thirds if you don't want to pound them)
Sauce:
5 T Dijon
1 stick butter
1 large garlic clove, minced
Panko Mix:
1.5 cups panko
1/2 cup freshly grated parmesan (or more)
2-3 T parsley
Preheat oven to 350.
Heat sauce ingredients in pot, stirring. Let cool and then whisk until completely mixed. Do not let cool for too long.
Sprinkle chicken breasts with salt and pepper, then toss into mustard sauce and coat completely. Dredge through panko mix and place on a large cookie sheet.
Bake chicken for 10 minutes, flip over and bake for 10 more minutes, until golden brown and cooked through. If the outer crust is not crispy then raise oven rack and increase temp to broil. Cook chicken for a minute or two on each side until golden brown.

Memorial Day
Memorial Day is much more than a three-day weekend that marks the beginning of summer. To many people, especially the nation's thousands of combat veterans, this day, which has a history stretching back all the way to the Civil War, is an important reminder of those who died in the service of their country.
